  • 48 hour whole berry fermentation pre-crush 

  • Crushed/Pressed/Free-run separated at press 

  • Cold Settled with Lallezyme C-Max enzyme 

    Fermentation:  

  • Vessel: Stainless Steel 

  • Temp:  approx. 63 degrees 

  • Time: approx. 2.5 weeks 

  • Yeast:  DV10 (Lalvin) 

  • Yeast Nutrients:  Go Ferm/Fermaid 

  • Aging: Held for 18-months, unfiltered
